Vigors sweet energy balls

 

What you need:

 

  • 8 – 10 dates (Take the soft ones. They are the glue which keeps it all together and gives the sweetness).

  • 1/3 banana (Adds some nice taste, but if you don't like bananas, you can skip them)

  • ca 300 g nuts (Peanuts, Hazelnuts, Almonds, or whatever you like

  • 3 spoons kakao

  • 1 spoon cinnamon

  • Coconutmilk

  • ½ cup of grated coconut

 

For ca 20 energy balls.

No artifical sugar.

No animal products.

Pure satisfaction.

 

Creationplace and tools:

 

  • Rubbergloves (You don't need them, but dates are pretty sticky and its easier with gloves).

  • Coated baking paper (You don't need that, too, but it makes rolling of the balls easier).

  • Something to grind the nuts (I use a manual grinder. You can do it with a knife, too).

  • A small bowl for the grated coconut.

 

How to do it:

 

  1. Grind the nuts

  2. Core the dates

  3. Prepare some heavy cream from kakao, cinnamon and coconutmilk. Take care that its not liquid after mixing it. The coconutmilk is just meant to stick the powder together.

  4. Spread the grinded nuts on the paper.

  5. Knead the nuts with the dates. Don't worry if you think it would be far to much nuts for 8 dates. If you knead for a while you will see, that the dates and nuts turn into some heavy dough.

  6. Add the 1/3 banana to catch up all the grinded nuts that may be left on the paper.

  7. If you have some moldable pastry, add the kakao cream.

  8. (In case the pastry is to liquid, you may add some more nut grind (if you have some leftover) or add some sesame seeds.

  9. Knead until everything is well mixed.

  10. Form little balls of ca. 3 cm diameter. You will see, you form them best on coated backing paper. If you cannot roll them, it means you made the dough too liquid.

  11. Roll the balls in the bowl with grated coconuts.

  12. Place them on a plate and put them in the fridge
